This is the ultimate celebration cheesecake for those who love chocolate and caramel
This is quite a soft cheesecake due to the caramel, so make sure you keep it in the fridge until serving (using a thicker caramel will also help)
I also found it easiest to use a hot knife when slicing it

INGREDIENTS
Base:
350g shortbread biscuits
100g unsalted butter, melted
Cheesecake:
350ml double cream, cold
500g cream cheese, room temp
120g icing sugar
120g Carnation caramel
Topping:
200g dark chocolate (chips or broken into chunks)
200ml double cream
8 millionaires shortbread bites
Gold/bronze sprinkles for decoration
